One of my favorite things to do when I get bored with meal prep is to get recipe inspiration from Pinterest. I especially love when I find a meal that needs a little cleaning up & extra protein! Here’s my version of a grilled veggie/cheese quesadilla.
Grilled veggie/cheese quesadilla[print-me do_not_print=".emoji"]
- 1 brown rice tortilla (Food For Life)
- 1/2 cup grilled yellow & green zucchini (you can use any veggies you’d like)
- 1/2 cup grilled mushrooms
- 1/4 teaspoon pesto
- 3oz Mozzarella Almond cheese (great alternative protein source if you need a break from )
*Grill veggies for a few minutes on each side before placing brown rice tortilla on griddle. Let the tortilla warm up a bit & on one side add 1/4 teaspoon pesto, veggies, and 3oz of sliced almond cheese. Flip other half on top and cook until the cheese melts.
*you can also use 1/2 almond cheese 1/2 chicken which brings to the total count to 311
